Polmard Eleveur Boucher’s 15-Year Rib Steak

When it comes opulence, the sky is not the limit (remember space travel?) and while we thought lavish living includes the usual hundred dollar meals, private jets, fast cars, grand boats, and majestic properties, it appears that all those are pale in comparison to the world’s most expensive beef, the 15-Year Rib Steak from French butcher shop Polmard Eleveur Boucher. At around $3,200 for the said rib steak, it may not be pricer than a Bugatti, but dollar-for-dollar, it is many times more exorbitant than any physical goods money can buy. It is beef for God sake. You know. Something that you eat, digest and poops out eventually. So yeah, that’s hell a lot money for a natural cycle.

Anyways, the butcher shop, now at the helm by the six-generation butcher, Alexandre Polmard, uses a hibernation method developed by the Polmard’s elders, which involved freezing the beef with -45 degree Fahrenheit cold air blown at it at 47 mph and keeping it that way for a cool 15 years. Apparently, this time and energy consuming beef maturing process enables the meat to “retain the flavor, texture, and quality of the beef.”

To top that up, the beef is not from just any ordinary cow; they are from one of the most popular breeds in France, called Blonde d’Aquitaine cattle, raised by the Polmard family’s farm in Saint-Mihiel, France. So, in a way, the quality of the meat is assured, from cradle-to-grave (like literally for the cow). So where in the world can you consume this $3,200 rib steak? Well, lucky for you, you won’t have pay that much (you are not going to eat the entire rib steak, are you?) as there are a few places where you can savor Polmard beef.

The first is Chef Guy Savoy’s restaurant in Paris, where you can choose between seared chuck steak and chuck-steak carpaccio for $143. Meanwhile Chef Fabrice Vulcan’s Caprice restaurant at Four Seasons Hotel Hong Kong is offering eight-to-nine course meal for around $390 per pax. Throw in an extra 4 grand per table, the entire encourage will get to enjoy the famed vintage Polmard rib steak. There’s another place in Hong Kong where you can find Polmard beef; it’s at Chef Nicolas Boutin’s French restaurant Èpure. But it don’t happen all the time. The restaurant occasionally offers two-course lunch tasting menus for $60+ per person, which will include Polmard beef.

The good news for those who are willing to drop handsome money for a taste for exquisite meat coming from Polmard, there will be a special event between April 21 and 23 where Alexandre Polmard and Chef Boutin will host a six-course tasting dinner to showcase Polmard beef in a variety cuts and cooking styles. And the price? A modest $192 per diner. If you are not into course meal, a la carte, as well as take away are available too. Last resort for a taste of Polmard’s famed meat is, of course, buying from the butcher shop itself. That means flying to Paris. Your choice.
