What does a kitchen knife have to do with CES? Probably nothing if it just looks sleek or is made of tofu. But it probably has a lot to do with consumer electronics if it vibrates over 30,000 times per second, so you can cut through food with ease.

Well, folks, such is what the Seattle Ultrasonics C-200 Ultrasonic 8” Chef’s Knife is. Billed as the world’s first ultrasonic chef’s knife, the C-200 is designed for home cooks, and thanks to the crazy vibration frequency, the knife behaves sharper than it physically is.
Now, I know what you are thinking. “Over 30,000 times a second of vibration? Wouldn’t you be fighting it?” Well, nope. You will not. In fact, you will not be able to see the blade move, nor can you hear it when it’s on. Hell, you cannot feel the vibration on the handle either.
A prominent orange button on the handle lets you engage the vibration, which, when you do, enables the knife to cut with up to 50% less effort, and with less sticking and easier cleanup.
As far as the knife itself is concerned, it features a 200 mm (8”) blade crafted from Japanese AUS-10 steel, hardened to 60HRC, and has an edge angle of 13 degrees per side. No talk about the handle, so tough luck for you handle enthusiasts out there.

Under the hood—yes, under the hood for a knife—it packs a 1,100 mAh removable lithium-ion battery pack, which is rechargeable via USB-C or, believe it or not, the Wireless Charging Tile. The latter is perfect for anyone who wants to go all the way high-tech. USB-C cable and charger are not included.
There’s no mention of the motor responsible for the vibration, nor any mention of the battery life. Strange that I have to tell you this, but the knife is IP65-rated for water resistance. For the first time, we’d have to tell you the IP rating of a knife. Also, for the first time, you will need to charge a knife. What a world we live in, don’t you think?
